1. Rice pudding and tiles recipe (dairy free)
This dairy free dessert recipe of the traditional rice pudding is accompanied by tiles. This time it has been made with rice milk, so it is suitable for vegans and people who cannot drink milk of animal origin.
Ingredients of Dairy Free Desserts:
|Rice SOS Special Desserts||1 cup|
|Umeboshi paste||1/4 of a teaspoon|
|Lemon peel||1 piece|
|Mint to decorate|
For the rice milk:
|Rice SOS Special Desserts||1 cup|
|Kombu seaweed||1 piece|
For the tiles:
|Chopped pistachios||1 tablespoon|
|Rice molasses||2 tablespoons|
|Pine nuts||1 tablespoon|
Preparation of rice pudding and tiles
To prepare the rice, soak the rice (1 cup) the day before.
For the rice milk , toast the rice in the speed cooker and stir until it starts to brown. Pour in the water, add the kombu seaweed and cover. Cook at 2, for 1 hour and a half or 2 hours from the first boil. Strain and reserve the rice milk.
Put the rice to cook (without draining) in a saucepan with the water. Add the umeboshi paste and stir. Cover and cook for 40 minutes over low heat. Add the rice milk and stir. Add the lemon peel, cinnamon stick, and raisins. Cover and cook for 20 minutes.
For the tiles , toast the rice cakes in the oven (previously hot) at 180º C for 2-3 minutes. Remove and let cool. Put the cakes in a plastic bag and break them up by hand. Put the rice molasses in a saucepan to reduce. Add the pine nuts and pistachios and cook for about 10 minutes. Add the crushed rice cakes, stir and place the mixture between two pieces of greaseproof paper. Roll out the tile and let it cool. Remove the papers and chop.
Serve the rice pudding and sprinkle with a pinch of cinnamon. Garnish with mint and accompany with the dried fruit tiles.
The main characteristic of brown rice, which differentiates it from white rice, is that it has much more fiber than this, which plays an important role in regulating intestinal function. 2. Chocolate and oatmeal energy bars recipe
This dairy-free desserts surprises us with this recipe for homemade energy bars based on carob and oat chocolate . Energy for our breakfasts or snacks.
Ingredients (4 people):
|Carob Chocolate||50 g|
|Butter or Margarine||50 g|
|Grated Coconut||25 g|
Preparation of the recipe for Chocolate and Oatmeal Energy Bars:
Put the carob chocolate with the butter or margarine in a saucepan . Add the honey , raisins , grated coconut, and flour . Stir and let it melt over low heat for approximately 10 minutes.
Place parchment paper on a baking sheet and top with a square cookie cutter. Pour the mixture inside and bake at 180ºC for 30 minutes.
Let cool, unmold and cut into four portions. Serve and accompany with an orange juice.
3. Recipe for Coffee Flan with soy milk
Coffee flan , a dairy free dessert made by Bruno Oteiza that provides fewer calories than a skimmed yogurt, unmissable and delicious.
Ingredients of the recipe for Flan of coffee with soy milk:
|Soy Milk||250 ml|
|Soluble Coffee||1 tablespoon|
|Mint Leaves||To Decorate|
Preparation of the recipe for Coffee Flan with soy milk:
Heat half of the soy milk. Add the coffee and saccharin.
Remove the casserole from the heat, add the rest of the milk and let it cool.
Place the yolk and whites in a bowl and beat them with a hand whisk. Add the soy milk (it is important that it is cold so that the eggs do not set) and mix well.
Divide the resulting liquid into 2 microwave-safe containers. Cover with plastic wrap and microwave on medium power for 4-6 minutes.
Let it warm, garnish with a few mint leaves and serve.
